the packets are a little pricey and we no longer shop a Ralphs now that we are on a tight budget. So I've been searching the internet for a recipe and have found a few but none where quite right.
Today, I took matters into my own hands, and it turned out pretty darn good.
Recipe: Mexican Corn Cake1 can Creamed Corn
1/2 cup butter, melted
1/3 cup masa harina (corn flour)
1/4 cup water
1/4 cup cornmeal
1/3 cup suagr
1/4 teaspoon salt
1/2 teaspoon baking powder
Mix dry ingredients together. Add water, creamed corn and butter. Mix to incorporate. Pour batter into an 8x8 baking dish and bake at 350 degrees for 50-60 minutes.
